Basic Definition
RPG stands for "Role Playing Game." It is a type of game in which the player does not focus on racking up points for killing enemies like a FPS, nor organizing resources to defeat a foe like an RTS. Instead, the player focuses on managing a singular character's statistics and resources in order to act as that character would in a given fictional world and usually storyline (some RPGs have no storyline, in which case they are open-ended). The world can include any number of other characters, areas, regions, creatures, and other objects to interact with. The point is not to destroy your enemies or all the characters in the universe, but to enjoy the experience of living the life of a fictional character in a fictional world, playing your role there.
Thus, the player "becomes" the character, and guides that character through the fictional world, making decisions, fighting enemies (frequency of fighting depends on the RPG), and going on quests for items, glory, gold, or anything the desiners wanted.
Statistics?
Statistics generally include HP, armor, ammunition, some form of currency (most fantasy RPGs use gold; sci-fi usually have a form of credits), and magical energy (fantasy RPGs generally have some way to limit usage of magic, if indeed there is any magic usage at all).
Items?
Many (not necessarily all) RPGs use items that have special importance within the story of world. Items can have special properties, like an armor bonus or magical powers. Or simply be material to the ques you are on.
Quests?
Quests in RPGs are journeys in which the character must go and complete a task. They can be vaque, like breech the city walls, or painfully specific, like slaughter the Golden Dragon. Quests will often include puzzles, like finding a way to enter a castle or city unseen. Items and interactions with other characters are generally important in quests.
Disclaimer
RPGs invariably never are exactly as described above. There are countless variations on the basic idea of living a fictional character's life in a game, and all are different. The above description is targeted slightly more towards RPGs as they are made with the AOM:TT, which of course, was never really intended to produce RPGs, although it does a fine job at it. The RPG genre is always open to and thirsting for inovation.
